Chinese chilli sauce

A spicy dip to accompany Chinese starters or other dishes



Ingredients


4 tbsp sesame oil (or any cooking oil)

65g onion (1 medium size)

2 tsp chopped garlic

3 tbsp dried chilli flakes

½ tsp salt

½ tsp ajinomoto (flavour enhancer)

2 tsp light soya sauce

2 tsp tomato paste


Method

Finely dice the onions. Heat oil in a wok and saute onion and garlic. When they are dark brown add all the other ingredients with 2 tbsp water to give it some liquid consistency. Simmer cook for few minutes. The sauce is ready. Let it cool down before serving. All the ingredients settle at the bottom and the oil floats at the top. It can be used as a dip for appetizers, soups, rice or noodles.
