Egg 65

a vegetarian dish inspired by a popular delicacy chicken 65 originating from south of India


Serves 4-5 people

Ingredients:


For pakoras(fritters) -

8 boiled eggs (finely chopped) or 1 cup grated cauliflower ( if you wish to keep it strictly vegetarian)

1 raw egg or 2 tbsp milk ( if you wish to replace egg)

¼ cup sweet corn

¼ cup spring onions (chopped, keep the greens separate)

4 tbsp all purpose or plain flour

3 tbsp bread crumbs (dry grind a slice of bread)



Following ingredients will be used for the sauce and pakoras(fritters)

6-8 cloves garlic (finely chopped)

2” piece of ginger (finely chopped or grated)

3-4 green chillies (2 finely chopped for fritters and 2 cut lengthwise into half for the sauce)

3 tbsp curry leaves

Salt

2 tsp chilli powder

2 tsp flavour enhancer

For the sauce:

1 tbsp tomato ketchup

1 tbsp sriracha sauce or any other red hot chilli sauce

cooking oil (2 tbsp for sauce and also for deep frying the fritters)

Method:


Pakoras(fritters)

Combine all the ingredients from this section and half quantity of each ingredient from the common section. Mix it all together nicely with your hands.



Make balls and deep fry in batches. Its best fried on medium to high heat for about 6-8 minutes.



Sauce

In a wok, add oil, saute chopped garlic and ginger. Add curry leaves. Keep the flame to medium. This should just take a minute and then add the two sauces, salt, chilli powder and flavour enhancer. Mix it all in. This doesn’t need much cooking. Just for a minute or so on medium flame to combine the flavours together.


Switch the flame off and add in the fritters. Finally add the slit green chillies and the greens kept aside from the spring onions.

Tips:

· The spice level of this dish can be adjusted according to your requirements.

· You can also add other vegetables like grated carrots, cabbage, mixed peppers etc.
