
HONEY MUSTARD CHICKEN
A flavourful combination of chicken and vegetables
Ingredients
- 6 chicken thighs with skin ( or any part of chicken of your choice)
- Sweet potato fries/ baby potatoes ( full – if small or halved if bigger)
- 1 tbsp honey
- 1 tbsp whole mustard grain
- Salt to taste
- 1 tsp crushed black pepper
- 1 tsp dried crushed chilli
- 1 tsp dried parsley
- 1 lemon zest and lemon juice
- 2 tsp crushed garlic
- Veggies – peas and spinach leaves
I tried this combination of veggies which worked great for me. You can choose others like
- mushrooms, courgettes, sweet corns ,carrots etc
- 2 tbsp olive oil
Instructions
- – Preheat oven at 220 degree Celsius.– Mix in all the ingredients with the chicken except olive oil and veggies. Transfer it to an oven proof dish.– Drizzle olive oil, cover it with a foil and leave it in the oven for about 35 minutes.– take the dish out and add the veggies. – place it back in the oven. This time without the foil. – it’s ready to take out when you can see a charred look on the skin, spinach leaves are wilted and there’s some moisture left in the dish.Enjoy chicken with its crispy outer layer and juicy inside accompanied with a blend of juices from flavours and veggies.
